Creamy Frittata Recipe

After reading the reviews, I decided to try the Creamy Pasta Alfredo. It's Delicious and my go-to whenever I crave comfort food! I've added some fresh ingredients like, minced herbs and veggies, along with more protein from the liquid egg whites I include in this recipe. The result is a dish similar to a frittata and it's prepared on a stove top.
Creamy Frittata al Fresco
Medium Heat. Slowly pour in one Pasta Alfredo packet and dissolve into 1 C boiling water.*
Cover pan for about 2-3 mins
Sprinkle 2 - 4 T of sliced green onions, diced bell peppers, parsley and any other veggies or herbs you like on top. As soon as the water has evaporated, remove from stove.
Quickly, glide a spatula beneath and around the mixture to loosen it from the pan. Return the pan to stove. Separate the pasta veggie ingredients in clumps around the middle (not to the edge) of the pan.
Slowly pour 1/3 - 1/2 C of liquid egg whites around the pasta mixture. Some of it will cover the pasta.
Re-cover the pan 2-3 minutes more.
Turn the heat down, if it's too hot.
The egg whites will begin to set. Remove lid. Gently loosen the edge of the egg white mixture around the edges of the pan and, gently tilt the pan for any liquid to collect at the edges and seep underneath the egg white and pasta mixture.

Add fresh grinds of black pepper plus, lots of freeze dried or fresh, minced chives or, other chopped herbs to taste. Cover pan about a minute or so, and the egg whites are cooked to your liking. Loosen the frittata around the edges with a spatula. Place the frittata on a dish and serve open faced or folded, like an omelette.
*Hint: Add 1/4 teaspoon of the Beef Bouillon Soup Mix to the boiling water. Add more to taste, after adding the pasta packet OR substitute 1 C bone broth for the water. (Thank you for the bone broth idea, Sarene Hampton!) The bouillon or bone broth make this entree come alive all by itself or, with the other extras in this recipe.
