I have a huge sweet tooth and this can be challenging as a bariatric patient because we all know sugar is our enemy. I have spent the last several years finding healthier desserts that I can enjoy after weight loss surgery and by far one of my favorites has to be banana pudding. I am a southern girl so this has always been a special treat for me. The problem is, a lot of times puddings can be full of sugar, which can cause significant issues for bariatric patients. I found this amazing banana pudding through Bariatric Food Source and decided to jazz it up a little bit to create my new favorite dessert.
For this recipe, you will need:
You will start by mixing water with the banana pudding mix to get a good consistency. Once you get it to the thickness that you like, top it off with some fat free cool whip, ½ banana, and a little handful of granola. I am a huge fan of granola and believe it can change the flavor of your pudding. You can get creative with the type you get, but just be careful not to grab one that is too high in sugar. If you want to get super fancy, you could even add a little bit of honey on top. Again, just be mindful of the amount and remember a little goes a long way. I am a huge believer in balance after weight loss surgery and I think it is totally acceptable to have healthier alternatives to your favorite desserts such as this one. The wonderful thing about this recipe is, you do not have to feel guilty. The banana pudding is full of protein and is low sugar. It’s a win-win situation! Stop what you are doing right now and go make this dessert. I promise you that you will not be disappointed.
